It's very late at night so I'll just give you this...
3 cups of dry chickpeas simmered for about two hours.
A shitload of tomotos diced though it doesn't really matter as they'll reduce.
A huge onion and a fuckton of garlic sauteed but set that aside.... don't let it simmer with the rest of the bullshit.
Okay, in a quart pot drop the chicken stock and tomatos and all of the chickpeas.
simmer that shit for an hour or so. This is the base, it's not gonna get more flavor this way (anyone tells you otherwise, fuck them)
in the skillet or sautee pan you had the onion and garlic, bring that back up and start adding your spices. The raw heat on the spices will change the flavors and you can adjust this specifically to your taste.
Afterwards, drop all that shit in and stir to incorporate.
Dump a fuckton of spinach in, as much as you'd like for your taste.
Grab a blending wand or if you don't have it, dump all of what you have into blenders Blend.
Return to the pot and drizzle a bit of olive oil on it.
Ladle and serve.
